Pancakes
2 c all-purpose flour
1 T sugar
2 t. baking powder
1/2 t salt
2 eggs, separated
2 c milk
2 T melted butter
Oil for griddle or pan
Beat egg whites until stiff - set aside.
Beat egg yolks, add milk, sugar and salt, beat in.
Add flour and baking powder and butter. Beat until just mixed (not necessarily smooth.
Add egg whites to batter and FOLD gently.
Cook over medium heat on a hot greased griddle or pan
